Five-Day Standard Recipes Training Programme for SERP SHG Canteen Women

The National Institute of Tourism and Hospitality Management (NITHM) successfully conducted a five-day Standard Recipes Training Programme for the Society for Elimination of Rural Poverty (SERP), Department of Rural Development, Government of Telangana, from 29 June to 3 July.

The training programme was designed to strengthen the culinary skills and standardization practices of women managing Self-Help Group (SHG) canteens under various livelihood enterprises. A total of 28 SHG women participated in the programme, representing districts including Nizamabad, Mulugu, Jangaon, Nirmal, Medak, Jagitial, and other parts of Telangana.

The five-day programme provided intensive hands-on training in standardized recipes, food preparation techniques, kitchen hygiene and sanitation, portion control, quality assurance, menu planning, and best practices in food service operations. Participants also gained practical knowledge on maintaining consistency in taste, presentation, and food quality while ensuring cost-effective and efficient kitchen management.

The training emphasized the importance of food safety, nutrition, customer service, and operational excellence, enabling participants to enhance the quality and sustainability of SHG- run canteens. Through interactive demonstrations and practical sessions, the participants developed confidence in preparing standardized recipes suitable for institutional and commercial food service.

The programme concluded with an interactive feedback session and certificate distribution. Participants appreciated the practical nature of the training and expressed confidence in implementing the techniques learned in their respective SHG canteens. The initiative reflects NITHM's continued commitment to supporting the Government of Telangana and SERP in empowering rural women through skill development, entrepreneurship, and sustainable livelihood enhancement.
